I try to cook meals that are mostly veggies and here are a few favorites that I am making right now.
I love Chipotle burrito bowls but it’s so much cheaper to make your own at home.
This is super easy, cheap, and tasty. I mix mine with Quinoa.
I suggest doubling the recipe and making two of these because we can eat an entire pan in one meal. Or, you can just roast the veggies and put them in tortillas like a burrito and just add toppings. It’s so good!
This is one of Alan’s favorite meals. We make homemade Naan and pile on the lentils! You can add a little bit of ground meat or add some TVP (if you don’t eat meat) to bulk it up.
